Berry Muffins

I took a recipe and completely revamped it.  The end product is so delicious!  No refined sugar, no dairy, little oil.  I'm back to baking!

* 1-3/4 cups flour (whole wheat or I used ground oats to make oat flour)

* 2 tsp baking powder

* 1/2 tsp baking soda

*1 tsp Stevia powder

* 1/4 tsp cinnamon *

1 /4 tsp nutmeg

* 1/4 tsp salt

* 1 cup fresh or frozen blueberries

* 2 eggs

* 1/4 cup canola oil

* 3/4 cup  100% juice (I used an apple/berry blend I had)

* 1 lemon zested

*old fashion oats for top of muffins

Directions Combine dry ingredients; toss the berries with about 2 tablespoons dry mixture and set aside. Separately, mix egg, oil, juice, and zest. Make well in dry ingredients and add egg mixture; stir gently, and when only partially combined, add berries. Fold ingredients together just until moistened (do not over mix). Divide batter into 12 well-greased muffin tins (stone!) Add oats on top of each muffin.  Bake at 400 degrees for 20-25 minutes, or until lightly golden. Cool briefly on wire rack, remove from pan.
